Chocolate + peanut butter + creamy ice cream… without an ice cream machine 🍫🥜

This one starts with cottage cheese and Greek yogurt, then gets blended with peanut butter, cocoa and maple until completely smooth.

Ingredients
2 cups cottage cheese
½ cup plain Greek yogurt
⅓ cup natural peanut butter
2 tbsp cocoa powder
3 tbsp maple syrup
1 tsp vanilla
pinch of salt
40g dark chocolate chips

Blend the cottage cheese first until silky.

Add the yogurt, peanut butter, cocoa, maple, vanilla and salt, then blend again.

Fold in the chocolate chips, pour into a loaf pan and freeze for about 6 hours.

Let it sit for 5 minutes before scooping.

Finish with a little peanut butter drizzle and extra chocolate chips.

No oven. No mixing bowl. Just one frying pan 🍫

This chocolate oat cake is soft, moist and ridiculously easy to make.

Everything gets mixed directly in the skillet, then you cover it and let it cook gently over low heat.

Ingredients
2 large ripe bananas
2 eggs
⅓ cup peanut butter
1 tbsp cocoa powder
1 cup oat flour
½ cup rolled oats
1 tsp baking powder
chocolate chips, optional
chopped nuts, optional

Mash the bananas directly in the pan, add the wet ingredients, then mix in the dry ingredients.

Spread evenly, add your toppings, cover and cook on low for about 15–20 minutes.

Slice it right in the pan and enjoy that soft chocolate center.

RECIPE
Savory Green Onion & Monterey Jack Cottage Cheese Muffins

Makes 12 muffins — about 30 minutes

Ingredients

1 cup cottage cheese

2 large eggs

½ cup milk

¼ cup melted butter

1½ cups all-purpose flour

2 tsp baking powder

½ tsp garlic powder

½ tsp onion powde

½ tsp salt

¼ tsp black pepper

½ cup sliced green onions

1½ cups shredded Monterey Jack cheese, divided

Instructions

Preheat the oven to 375°F / 190°C.

Generously grease a 12-cup muffin tin.

Add cottage cheese to an empty blender.

Crack in the first egg.

Crack in the second egg separately.

Pour in the milk separately.

Pour in the melted butter separately.

Blend until completely smooth and creamy.

Add all-purpose flour to an empty large mixing bowl.

Add baking powder separately.

Add garlic powder separately.

Add onion powder separately.

Add salt separately.

Add black pepper separately.

Whisk until evenly combined.

Pour the blended cottage cheese mixture into the dry ingredients.

Fold gently until just combined. Do not overmix.

Add the sliced green onions.

Add 1 cup of the shredded Monterey Jack separately.

Fold just until evenly distributed.

Divide the batter evenly between the 12 muffin cups.

Sprinkle the remaining ½ cup Monterey Jack over the tops.

Bake 18–22 minutes, until puffed, golden, and a toothpick inserted in the center comes out clean.

Rest about 5 minutes.

Serve warm — tear one open while still warm for the melted cheese pull.

I almost pulled it out too early.

The edges were bubbling and it looked finished. But the middle was still quiet. That's the part that matters. Five more minutes and the whole center started going too.

That's the difference between a slice that holds and a puddle on the plate.

The crust is gluten-free and it still shatters. Cold butter, water one spoon at a time, two letter folds before the last chill. Peaches go in raw and cut thick, so they soften without collapsing.

No pie dish. You fold the edges over and it's done.
