One of my go-to meals! 🌱 I always have these ingredients on hand, especially since I’ve been eating vegetarian for the past 6 years. It was honestly one of the best things I did for my body.
What I didn’t know for most of my life was that I was actually allergic to multiple types of meat—beef, pork, chicken, and more. Once I eliminated them from my diet, I finally started feeling my best. 🙌
This stir-fry is not only packed with plant-based protein but also low in carbs, and it’s delicious! This meal is a perfect reminder that food can be both nourishing and enjoyable. Have you made any changes to your diet that made a big difference?
Here’s the recipe:
Veggie Stir-Fry
Ingredients:
- 2 cups broccoli florets (high in protein and fiber)
- 1/2 cup edamame (shelled)
- 1/2 red bell pepper, sliced
- 1/2 zucchini, sliced
- 2 tablespoons olive oil (or avocado oil or your favorite oil)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame seeds (for garnish)
- Red pepper flakes (optional, for some heat)
- Salt and pepper to taste
Instructions:
In the same skillet, add the remaining tablespoon of olive oil. Add the garlic and ginger, cooking for about 1 minute until fragrant. Add the broccoli, zucchini, and red bell pepper. Stir-fry for about 5-7 minutes, or until the veggies are tender but still vibrant.
Add the edamame and cooked tofu back into the skillet. Drizzle with soy sauce, sesame oil, and rice vinegar. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.
Remove from heat, sprinkle with sesame seeds and red pepper flakes (if using), and season with salt and pepper to taste. Serve hot and enjoy!
Optional:
You can enjoy it on its own or pair it with cauliflower rice for a complete meal. Or you can add 1 block firm tofu, drained and cubed.
How to Prepare the tofu: Press the tofu to remove excess water, then cut it into cubes. Heat a non-stick skillet or wok over medium heat and add 1 tablespoon of olive oil. Once hot, add the tofu cubes and cook, turning occasionally, until golden brown and crispy (about 7-10 minutes). Remove from the skillet and set aside.
