One of my go-to meals! 🌱 I always have these ingredients on hand, especially since I’ve been eating vegetarian for the past 6 years. It was honestly one of the best things I did for my body.

What I didn’t know for most of my life was that I was actually allergic to multiple types of meat—beef, pork, chicken, and more. Once I eliminated them from my diet, I finally started feeling my best. 🙌

This stir-fry is not only packed with plant-based protein but also low in carbs, and it’s delicious! This meal is a perfect reminder that food can be both nourishing and enjoyable. Have you made any changes to your diet that made a big difference?

Here’s the recipe:
Veggie Stir-Fry
Ingredients:
- 2 cups broccoli florets (high in protein and fiber)
- 1/2 cup edamame (shelled)
- 1/2 red bell pepper, sliced
- 1/2 zucchini, sliced
- 2 tablespoons olive oil (or avocado oil or your favorite oil)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame seeds (for garnish)
- Red pepper flakes (optional, for some heat)
- Salt and pepper to taste

Instructions:

In the same skillet, add the remaining tablespoon of olive oil. Add the garlic and ginger, cooking for about 1 minute until fragrant. Add the broccoli, zucchini, and red bell pepper. Stir-fry for about 5-7 minutes, or until the veggies are tender but still vibrant.

Add the edamame and cooked tofu back into the skillet. Drizzle with soy sauce, sesame oil, and rice vinegar. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.

Remove from heat, sprinkle with sesame seeds and red pepper flakes (if using), and season with salt and pepper to taste. Serve hot and enjoy!

Optional:
You can enjoy it on its own or pair it with cauliflower rice for a complete meal. Or you can add 1 block firm tofu, drained and cubed.
How to Prepare the tofu: Press the tofu to remove excess water, then cut it into cubes. Heat a non-stick skillet or wok over medium heat and add 1 tablespoon of olive oil. Once hot, add the tofu cubes and cook, turning occasionally, until golden brown and crispy (about 7-10 minutes). Remove from the skillet and set aside.

Happy 93rd birthday to Great Sand Dunes as a unit of the National Park Service!

Great Sand Dunes National Monument was established on March 17, 1932, but the pathway to national monument status is a story about gumption from a group of women who had gained the right to vote just 10 years before.

In June of 1930, local chapters of the Women’s PEO (a philanthropic educational organization) discussed their growing concerns about threats to the huge dunes at the eastern edge of the San Luis Valley. Miners were actively extracting gold, and other mineral developments were being considered. A local resident, Elizabeth Spencer, presented a case about the unique geological, scenic, scientific, and historical importance of the dunes. She urged her fellow PEO members to campaign for the dunes to be federally protected.

The women of PEO lobbied their local, state, and federal representatives about why the dunes should be protected. Finally, these efforts proved to be gaining traction when National Park Service Director Horace M. Albright instructed Yellowstone Superintendent Roger Toll to investigate the dunes and surrounding lands. Toll reported the wonders of the dunes to Director Albright, who referred the information to Congress. They passed a measure recommending their protection, with the understanding that the president has the authority to directly create national monuments under the Antiquities Act of 1906.

Two years after their campaign began, Great Sand Dunes National Monument was established by President Herbert Hoover, a remarkable achievement for the PEO and other local citizens.

Beginning in the 1990s, threats from large scale water export from the valley prompted citizens to again come together, this time to expand the boundaries of the monument to protect the Great Sand Dunes’ geological and hydrological system as a large national park and preserve. This effort would also help to protect groundwater for agriculture in the San Luis Valley, and was largely supported by both major parties. In 2004, Congress established Great Sand Dunes National Park and Preserve.

We take it for granted today that women can have political presence and influence, but a century ago women had just received the right to vote in 1920, and the political world was almost completely comprised of men. The women of the PEO courageously worked in the system of that time to protect these dunes for all generations.

On this 93rd birthday of the park, and to celebrate March as Women’s History Month, we honor the contributions of women to conservation history here in the United States of America.
