Known as wild leeks, ramps are one of the most sought-after signs of spring for chefs, foragers, and serious food lovers. Their flavor is unmistakable: a rich cross between garlic, onion, and scallion with a deep, earthy backbone that tastes like the forest floor waking up after winter.

Typical preparation of ramps includes chopping them up and infusing butter to make ramp butter. Sauteed and grilled ramps make a great side to hearty proteins. They are served tucked into omelets at brunch spots, blended into pesto, or shaved over wood-fired pizza. Blanching and blending ramps into a liquid is a great way to incorporate ramps into pasta and rice dishes.

I tried incorporating them into risotto. Although delicious, I included sauteed mushrooms and asparagus for round two leftovers, which made it over the top.
