This is a camping meal that always makes it onto our menu. It’s easy, pretty low mess, and soooo tasty. All you need is a 2 burner camp stove, a few ingredients, and a bit of practice folding!!

This is the Mountaineer camp stove. It’s a large 2 burner stove that was actually designed with rafters, overlanders, and backcountry travelers in mind. It’s big enough to cook for a group but is really light for its size! It also produces a LOT of heat, so it makes cooking outside easy and enjoyable.

Here’s what you need:
• large tortillas (and small if you want to buy 2 packs)
• ground beef
• can of black beans
• tostada shells or hard taco shells (or tortilla chips!)
• queso/sour cream
• pico de gallo
• lettuce
• taco seasoning

1. Cook the ground beef fully in a pan and season with a packet of taco seasoning
2. Add the can of black beans and cook until warm
3. Layer in a large tortilla:
• black beans & beef
• tostada shell
• queso
• lettuce
• pico de gallo
• small tortilla cutout

3. Fold around the tostada shell & crisp on both sides (folded size down first)
4. Dip in your choice of sauce!!

any trail near a river 🤝 me ( )

I was so stoked to find this trail close to home from the X Two For The Trails Collection!!

is our favorite non-alcoholic beer. We bring them along on all of our camping trips to have the crisp taste and experience, while still being able to enjoy our full day outside, hiking, climbing, etc.

The Two For The Trails program donates up to $2 million annually to grantees who actively expand outdoor access via trails and parks. This looks like outdoor conservation projects, invasive plant removals, waterway cleanups and so much more.

This trail is one of many trails that benefits from these funds, and it was so cool to experience such a beautiful trail from this list!

You can find the full trail on AllTrails “South Fork of the American River.” We ended at “satans cesspool” (unique name 😂) and it was the perfect river dip spot!!

a solo hike in one of my favorite places!! :)

I have been wearing the sunscreen for the last year and love love love the feel of the formula, that it doesn’t break out my skin, and it stays on even when it sweating. The sun in tahoe is really intense, so SPF 50 is essential out here!

Pretty amazing what you can have access to while camping inside the national park! There are two stores: one in curry village and one in Yosemite village.

Curry is great for quick necessities, snacks, some camping items (plus you can walk from the campsites). Yosemite village is a much larger store with more food & veggies, souvenirs, etc (which is where this video is taken!!)

Thought this would be helpful if you’re planning a summer trip!!

favorite camping dinner recipe 👇

This just turned out to be such a fun relaxing day in the valley 🙂‍↔️. The rain and fog was so gorgeous!!! And hetch Hetchy was amazing, I’m so glad we finally got to go.

We hiked about 5.5 miles total to wapama falls and back!

Here’s our dinner recipe:

Bbq pulled pork flatbreads

Ingredients:
• bbq sauce
• garlic naan
• mozzarella cheese
• pulled pork (I buy this ready made from Trader Joe’s) (can also do their chicken!)
• red onion
• hot honey
• cilantro
• chili crisp (optional)

First open the pulled pork and heat it up (crumble into small pieces). Crisp both sides of the naan in a pan with butter. Turn the burner off and assemble the pizza with bbq sauce, pork, onion, and mozzarella. Turn the burner back on low (as low as possible) and cover with a lid to let the cheese melt. Once it’s crisped, take it off and add hot honey, chili crisp and cilantro

not the day we expected 🥲😅

Honestly I wasn’t even sure if I’d post this because I was so frazzled all day this video didn’t even make a ton of sense, but with how fun and exciting the van build was, I wanted to show what it actually was like for the first part of our time in Yosemite.

We were absolutely exhausted when we got to the valley after working for 30 days to get here, but we were so determined to enjoy this trip that we worked so hard to be on.

We knew the first few days we would be working out some kinks, and these ended up being:

1. our bed was EXTREMELY squeaky night 1. I don’t know why, but the wood squeaked so badly that if you moved even a tiny bit it would wake both of us up. Somehow this resolved itself by night 2 (??).

2. There is a sensor in one of the doors that is apparently blocked, causing the van to honk twice every time we lock it or start driving… haven’t figured that one out yet.

3. And the biggest issue: our batteries. The batteries we used in the build are from the old build, they were one of the few things we were able to keep to save money on, and they are big batteries anyways. Well… morning 1 we go to make coffee, and the whole van shuts off. The batteries were dead, and if you know anything about lithium ion batteries, this is a bigger problem than you would expect.

We had to turn on the van to get any power, and this was an ongoing problem our whole trip. We ripped the garage apart multiple times trying to troubleshoot, and ended up finding a bunch of loose connections within the battery and some missing parts inside?? We honestly aren’t sure if someone messed with it before or what. I really thought we were going to have to go home after spending 30 days trying to get here.

But, Kelby is a magician, and managed to fix the issue in one of them, and get us through the trip!! We aren’t totally sure we have it fixed, but we made a lot of progress, and are going to keep trying to not have to buy new batteries…

Anyways, I just wanted to share a bit of what happens when you build something so quickly… and some of the realities of traveling in a vehicle in general. They truly always keep us on

THE LAST PART!!!

guys… I genuinely cannot believe how fast Kelby built this, and it turned out to be 10000x better than I ever could have imagined.

We could not have done this without the help of my dad the last few days, he really saved our butts to keep us moving through some extra setbacks.

I feel like one of the main reasons we were able to get this done so quickly is because we have lived full time and traveled long distances in our campers before, so we knew a lot of basic things about what we wanted to prioritize, what works well, and what isn’t worth the time.

These short videos can’t even begin to fully show how much work this was, Kelby worked sunrise to midnight every day to make this happen. The videos almost seem silly with how fast they make this seem 😂

Also, I can’t say how grateful we are to have this job, so Kelby could dedicate his whole month to making this happen. Truly a fever dream, and I will never take that for granted.

I NEVER thought we would have a van like this, and as I type this, I’m working from the van in Yosemite valley, and just feel so so so lucky.

Very excited for all of the adventures that await :)

part 1: day 1-14 😅

This is when we really started questioning if this was even possible 🫠

These 14 days are the least amount of visible “build” but the most important part to make sure the van actually runs properly!! Electrical, plumbing, & insulation needed to be completely done before we could start on the aesthetics, which comes in the next two parts :)
