A full day of lazy but balanced(ish) what I eat in a day but realistic and easy!

Breakfast: chick fil a
Lunch: meal prepped cheesy chicken (recipe posted)
Dinner: yakisoba and chicken

This would be a perfect back to school recipe too! I’ve never met someone who didn’t like this soup.

Green Enchilada Soup

Ingredients:
1.5 lb chicken breast
1 cup bone or chicken broth
1 (10 oz) can green enchilada sauce
3 oz light cream cheese
3 tbsp green salsa
1/3 cup Monterey Jack cheese
1/3 cup half & half

Instructions:

1. Add chicken, broth, and sauce to the crockpot. Cook on high for 4 hours or low for 6 to 8 hours.
2. Shred the chicken, then mix in the cream cheese, salsa, Monterey Jack cheese, and half & half.
3. Heat for 30 minutes, until everything is melted and combined. Serve and enjoy!

Nutrition (approx. per serving):
Calories: 315
Protein: 42g
Carbs: 7g
Fat: 13g

Servings: 4

Note: Double the recipe if you’d like more servings for meal prep.

Serving suggestion: I like to top mine with sour cream or plain Greek yogurt and serve it with tortilla chips on the side.

Pleaaase try this! I’m obsessed. I made it up and I’m very proud of it. Haha

Cheesecake Bowl

1/4 c low fat cream cheese
3/4 c vanilla greek yogurt
2 tbsp lime juice
1/2 scoop vanilla protein (I like - MEAGAN10 to save)
1 tbsp sugar free cheesecake pudding mix
1 tsp skinny syrup vanilla (optional)
1/2 tsp vanilla extract
1/4 tsp butter extract
1/2 graham cracker sheet (2 crackers)
Sugar free reddi whip

Microwave the cream cheese for 10 seconds til softened and stir. Then add greek yogurt, lime juice, protein powder, pudding mix, and extracts. Mix throughly (stir a few mins to get out clumps - or use an immersion blender) then overnight in the fridge. I think freezing would be great too! Then it’d be more solid. Sprinkle graham crackers and reddi whip on top. ENJOY!

The easiest microwave pancake bowl with high protein! 🍌🥞 Such a good breakfast.

Microwave Protein Pancake Bowl
* ½ cup Kodiak Cakes Pancake Mix
* ¼ cup Fairlife Fat Free Milk
* ½ medium banana, mashed
* 1 large egg
* 1 tsp mini chocolate chips

Toppings
* ½ medium banana, sliced
* Sugar-free whipped topping

Directions
1. Mash half of the banana in a microwave-safe bowl.
2. Add the egg, Fairlife milk, and Kodiak Cakes mix. Stir until combined.
3. Sprinkle the mini chocolate chips on top.
4. Microwave for 2½ to 3 minutes, or until set.
5. Top with the remaining banana slices and a dollop of sugar-free whipped topping.
