The Amazing Smash Chickpeas Caesar Tacos - Oye Hoye Kamaal! 😍

Ingredients: For Chickpea Tikki: 1 bowl of soaked and boiled chickpeas, 2 tbsp bread crumbs, 2 tbsp corn flour, 1 tsp parsley, 1 tsp thyme, 1 tbsp chopped garlic, 1 tbsp soy sauce, 2 tbsp mayonnaise, 1 tbsp ginger powder, salt pepper as per taste, 1 tsp Kashmiri lal mirch, 1 tsp bhuna jeera powder, 1 tsp chaat masala, 1 tbsp water

For Smash Taco: Mini tortilla bread, chickpea batter, 1 tbsp oil/butter

For Toppings: Lettuce, Caesar dressing, crispy tortilla chips, parmesan cheese, and chaat masala

Steps:
1. In a processor, add chickpeas and all ingredients for tikki and mix to make a coarse paste
2. In a pan add butter, add tikki paste, put tortilla bread over it and smash it
3. Let it cook for 3-4 mins until cooked and brown
4. Flip and cook tacos for few seconds if you want soft, or cook more for crispy
5. Top with lettuce, Caesar dressing, crispy tortillas, parmesan cheese and chaat masala

Ingredients: 1 bowl of dried apricot, 1 small bowl of sugar, a pinch of elaichi powder, 1½ glass of water, 2 tbsp condensed milk, 2 tbsp fresh cream, and dry fruits of your choice�
Steps:
1. Soak apricots in warm water for 1-2 hours until soft
2. In a pan heat water, add apricot, sugar, elaichi powder
3. Cook until apricot is completely softened
4. Let it cool completely
5. Pour into serving glasses
6. Add condensed milk, fresh cream, and chopped dry fruits
7. Refrigerate for an hour and serve chilled�

Road Side Mushroom Kalan Chaat - Oye Hoye Kamaal! 😍

Ingredients: For Mushroom Mixture: 1½ pack of mushroom finely chopped, 1 bowl of chopped cabbage, 1 bowl of small chopped onions, 1 tsp salt, 1 tsp black pepper, 1 tsp Kashmiri lal mirch, 1 tsp haldi, 1 tsp bhuna jeera powder, 1 tsp chaat masala, 1 tsp garam masala, 1½ tbsp besan and 2 tbsp corn flour, oil for frying

For the Gravy: 2 tbsp oil, 1 small onion finely chopped, 1 tsp Kashmiri lal mirch, 1 tsp haldi, 1 tbsp coriander powder, 1 tsp bhuna jeera powder, 1 tsp garam masala, 1 tsp chaat masala, 1 tsp brown sugar, ½ cup water, 1 tbsp ginger garlic paste, 7-8 curry leaves, 2 tbsp tomato ketchup, 3 tbsp soy sauce, 1 tbsp vinegar, 1 tsp lemon juice

For Chaat: Mushroom kalan, barik sev, onions, fresh coriander

Steps:
1. Mix mushroom, cabbage, onions, spices, besan and corn flour to make a nice doughy mixture
2. Deep fry the mushroom pakoras until golden
3. Heat oil in pan, add onion and sauté
4. Add spices, water, ginger garlic paste and curry leaves, cook for 1-2 mins
5. Add ketchup, soy sauce, and vinegar, mix well
6. Add brown sugar, add mushroom pakoras, and break them into halves
7. Mix well and cook for 1-2 mins, sprinkle lemon juice
8. Transfer to bowl, top with chopped onions, barik sev and coriander

One Pot Creamy French Onion Mushroom Pasta - Oye Hoye Kamaal! 😍�
Ingredients: 1 tbsp butter, 1 tsp oil, 1½ onions sliced, 1 bowl of chopped mushroom, 1 tbsp chopped garlic, 1 small bowl of coriander, 1 tsp chilli flakes, 1 tbsp thyme, 1 tbsp parsley, 1 tsp oregano, 1 bowl of vegetable broth, 1 bowl water, salt and pepper as per taste, 1 small bowl of fresh cream, 3-4 tbsp grated parmesan, and shredded cheese (optional)�
Steps:
1. In a pot melt butter and add oil
2. Add onions, sauté a little, add salt
3. Keep sautéing onions, adding little water when required, sauté until caramelized
4. Add chopped mushrooms and sauté a little
5. Add salt, pepper, chilli flakes, thyme, oregano, parsley
6. Mix well, add pasta
7. Add vegetable broth and water, mix well
8. Close lid and cook until pasta is soft and cooked
9. Add fresh cream and parmesan, mix well
10. Add shredded cheese, close lid, cook for another 1 minute until cheese melts�

Garma Garam Veg Thukpa - Oye Hoye Kamaal! 😍

Ingredients: 1 bowl of boiled noodles, 1 tbsp oil, 1 tbsp garlic chopped, 1 small onion sliced, 1 small tomato sliced, ¼ bowl of coriander stems, ½ lt water, 500 ml of vegetable broth, 1 tsp bhuna jeera powder, 1 tbsp Kashmiri lal mirch, salt and pepper as per taste , Veggies: 1 bowl of cabbage, ½ green capsicum sliced, ½ yellow bell pepper, ½ red bell pepper sliced, ¼ bowl thinly sliced carrots, ½ bowl of sliced mushrooms, 1 tbsp soy sauce, 1 tsp chilli sauce, 1 tbsp lemon juice, 1 tbsp homemade chilli paste, coriander and green onion for garnishing

Steps:
1. Heat oil in a pan, add chopped garlic and sauté a little
2. Add onions and tomatoes, mix well and cook until soft
3. Add salt, pepper, and spices with a little water, mix well and sauté
4. Add vegetables, mix well and cook for a minute
5. Add vegetable broth and water
6. Add soy sauce and red chilli paste, mix well and cook until boil comes (3-4 mins)
7. Turn off flame and squeeze lemon juice
8. Serve: In a bowl, add boiled noodles, pour soup and veggies, garnish with coriander and green onion, top with homemade chilli paste

Zordaar Creamy Broccoli Crunch Salad - Oye Hoye Kamaal! 😍

Ingredients: For Salad: 1 bowl of broccoli, ¼ bowl of sun dried tomatoes, ¼ bowl of dried cranberries, ¼ bowl of raw onions, ½ bowl of roasted dry fruits (any of your choice - we took a mix of almonds, cashews, and watermelon seeds)

For Dressing: 3-4 tbsp high protein Greek yogurt, 2 tbsp mayonnaise, 1½ tbsp honey/maple syrup, 1-2 tbsp apple cider vinegar, salt and pepper as per taste

Steps:
1. Dry roast dry fruits for 1-3 mins
2. In a bowl mix Greek yogurt, mayonnaise, apple cider vinegar, maple syrup, salt and pepper, mix well to make a creamy dressing
3. In a bowl add broccoli, cranberries, sun dried tomatoes, roasted dry fruits and onions
4. Add dressing and mix well, serve chilled

Khatti Meethi Mango Chutney 😜 Saara Chatorapan Shant Ho Jayega, Oye Hoye Kamaal! 😍�
Ingredients: 1 bowl of mango, 1 tbsp oil, 1 tbsp chopped garlic, 1 tbsp sliced ginger, 1 tsp bhuna jeera powder, 1 tsp Kashmiri lal mirch, 1 tsp haldi, salt as per taste, 1 cup of sugar, 1 small bowl of vinegar, water�
Steps:
1. In a pan, heat some oil
2. Sauté ginger garlic, add dry spices, and a little water
3. Add mango, add sugar, add vinegar, and water
4. Mix well and cook on simmer for 30-45 min until desired texture is achieved
5. Let it cool, and store in a jar and use when required�

This Soyabean Bhuna Masala Will Make You Forget Paneer! 😜 Oye Hoye Kamaal! 😍

Ingredients: For Boiling Soyabean: 1 bowl of soyabean, salt and water

For Soyabean Bhuna Masala: 1 bowl of boiled soyabean, 1 tbsp oil, 1 onion sliced, 1 tomato chopped, ½ bowl of coriander, ¼ bowl of cashews, 1 tsp bhuna jeera powder, 1 tsp haldi, 1 tbsp Kashmiri lal mirch, 1 tsp garam masala, 1 tbsp coriander powder, salt and pepper as per taste, 1 tbsp jeera, 1 bay leaf, 1 inch cinnamon stick, 1 glass of water, and coriander for garnishing

Steps:
1. In a pot, heat water, add salt, bring to boil, add soyabean and boil them
2. In a pan heat oil, add onions and sauté them
3. Add tomatoes, coriander, and cashews and mix well and sauté
4. Add dry spices, and a little water and cook until oil is separated
5. Let them cool and grind to a fine paste
6. In a pan heat oil, add jeera, and whole spices and sauté them a little
7. Add the tomato paste, and a little water cook again until oil separated
8. Add soya bean, mix them and add salt and Kashmiri lal mirch
9. Mix well and cook with lid on for 10-12 mins until properly cooked and oil is separated
10. Garnish with coriander leaves and serve hot
