Last week, I received a special delivery from Freedom Acres Ranch, a Black-owned ranch right here in Colorado.
They sent me an incredible basket filled with fresh vegetables and one of their steaks, with a simple challenge: Chef, make whatever you want and tell us what you think.
Well, you know I had to put the Small Batch Smokehouse touch on it.
I took their steak, added my special jerk seasoning and fresh Scotch bonnet peppers, and put it in the smoker to create our Smoked Jerk Steak.
Let me tell you—the steak was tender, juicy, flavorful and absolutely incredible. The quality of the beef combined with that smoky jerk flavor and the heat of the Scotch bonnets was one hell of a combination.
Great food starts with great ingredients, and I have a tremendous amount of respect for the farmers and ranchers who put in the work to produce them.
So I’m asking my friends, customers and fellow food lovers: support Freedom Acres Ranch and support Black farmers right here in Colorado. Check out what they’re producing, buy their products, and when you do, tell them Chef Scott from Small Batch Smokehouse sent you!
Much respect to Freedom Acres Ranch. Thank you for the basket—and yes, I would absolutely buy that steak again.
