is hosting incredible Chef’s tables every month and I had a blast checking it out in May. The food wasn’t just delicious - it was a full experience! There was everything from a candle that melted for you to dip your fry bread into, to a more traditional elk wellington. The night even ended with ‘milk and cookies.’ 👀 This was something you’re going to want to experience for yourself - and you can! Roth’s Chef’s Table for June is called a Tale of Two Kitchens where you’ll get a blend of Indian and Mexican cuisines through French technique. They’re hosting the dinners June 10-13 or 23-25 - and trust me when I say you want to try this.

In January, I went to Mexico City for a quick trip to celebrate my friend’s 40th birthday. Of course I did my best to get to as many incredible restaurants as I could while there. I can’t believe how many Michelin spots I ended up at.

Pujol has been a bucket list restaurant for me for years and it was probably a top two restaurant I’ve ever experienced. Quintonil had some incredibly creative courses and the fact that I got to sit at the chef’s counter was a once in a lifetime experience I won’t forget. I wish I had another week purely to eat at the taco stands throughout the city.

Here are some of my favorite bites from my trip, in order from favorite to (still delicious) least favorite.

If you’re already making brunch plans for next weekend, in downtown Colorado Spring is your spot. They just launched some tasty new brunch menu items that I’m obsessed with. That breakfast sandwich with romesco and homemade fennel sausage is to die for, and the mini cini pizza is perfect for a sweet treat to end the meal. Don’t forget they have bottomless mimosas and some bomb Bloody Marys. They serve brunch from 10AM-2PM on Saturdays and Sundays.

One of the fun parts about going to a mountain town is popping into some of the hat bars, and now we have one right here in Colorado Springs! opened this weekend and they’re making custom hats, selling vintage clothes and home goods, and offering a fun shopping experience 🤠 Their store is gorgeous and the mural outside? I’m obsessed. If you love a boutique, or maybe just want a hat, pop by and check them out.

is now open in and they’re serving up some of the BEST sandwiches in Colorado Springs - not to mention incredible wings and delicious cannoli. I haven’t even tried the pizza and they’re already one of my favorite new places in town. They have an insanely cool rooftop patio with views of Pikes Peak, and the inside is beautiful. And yes they do have GF options.

My top menu items:
Italian Hero (on focaccia)
The Cutlet (panuozzo)
Garlic Parmesan Wings
Cannoli
