Meagan Thomas is a 30-something Colorado Springs native with a passion for food and traveling. With a bachelor’s degree from Baker University, a tiny liberal arts college located in Eastern Kansas, Meagan began working as a breaking news reporter for the Lawrence Journal-World newspaper. After a few short months of living in Lawrence, Kan., she knew her heart was in the Rocky Mountains and made the move back to Colorado. It took only a few months of being back in the Springs for her to realize how much the city and state are growing and changing. Even though she’s called Colorado home for many years, she loves discovering the best local restaurants, bars, boutiques, fitness studios and events in Colorado Springs and throughout the state. She has a deep belief in supporting the businesses that help make Colorado Springs a unique place to live. My new favorite restaurant is a food truck parked at a brewery and once you check it out, it’ll be your favorite restaurant too. I’m talking about BC’s Barbecue at Lost Friend Brewing Company 🍻 go there for some great beers - I personally love their hard seltzer slushies - and order everything off the menu at BC’s. I’m not exaggerating. Offer to buy your coworkers lunch or something, it’s worth it to have a little bit of everything.

I spent 24 hours at Belleview Station eating and drinking, and here’s what you need to know for your next stay in DTC.

Stay at the Apiary Hotel Belleview Station. It’s easy to walk around and you’re right next to the interstate if you’re heading anywhere else in Denver. The rooms are beautiful and clean and the staff was so kind.

Snag lunch at La Loma Mexican Restaurant and don’t forget to order the green chile. Obviously you need a marg, too.

Have drinks at the hotel at Keepers Cocktail Lounge for an easy pre or post dinner hour. They’ve got a great happy hour and the vibes are so good there.

For dinner you have to check out EL TULE. Why aren’t more people talking about this place. First off, it’s stunning. They have such a unique and fun menu, and it’s giving a great elevated experience.

And if you want to stay out, there are plenty of restaurants and bars within walking distance of the hotel so you can have fun all night long!

Had to check out the pumpkin co**ha from La Co**ha Bakery & Coffee 🎃 I guess summer is over guys. As someone who doesn’t always love pumpkin, this was good because it was your typical co**ha and the pumpkin was only the filling. No overkill on it.
